This looks really great Serena. I do the same thing and my weekly menu looks pretty similar. It is easier to make meals if you know that tonight you are going to have "this" kind or meat or if it will be a vegetarian meal.
I see that you have sandwiches for lunches, (or leftovers) i've had sandwiches on my list for weeks but I try to mix it up even more by making wraps or bagel sandwiches. I realize that bagels have a TON of carbs and fat, but it is a nice change once in a blue moon! I don't know if you have access to tortillas...but wraps are fun!
Instead of mayo on sandwiches, I like using hummus. It is also pretty easy (and low cost) to make from scratch. You also have more control over how much oil, salt, etc goes into it!
I have a killer recipe for a vegetarian Moroccan stew. Hit me up if you want details.
Have you ever been to allrecipes.com ? That is my go-to site for meal planning. And sparkrecipes, of course!
Thanks for sharing!
Hey Sarah- how do you make your hummus. They do not sell it here. I have one recipe, but would love to see how you make your as well.
